Why we picked one side
A kitchen that cooks both has to keep them apart perfectly, every shift, forever — separate boards, separate pans, separate hands, separate storage. In a small kitchen running at speed, that is a promise most places cannot honestly keep. Rather than ask you to trust a process you cannot see, we removed the problem: there is no meat, fish or egg in the building at all.

Get those three right and paneer, mushroom, corn and capsicum have nothing to apologise for. That is where our attention goes: dough that crisps properly, a makhni sauce made with cashew paste, and mozzarella that actually stretches.
